Ingredients

2 handfuls of nori seaweed flakes
3 endives
140g sweetcorn
1.5 avocados
20g shelled walnuts
20g currants
100g pumpkin
Lemon juice
Olive oil
Salt to taste

Preparation

Toast the nori seaweed in a frying pan without oil for 2-3 minutes. Set aside.
Separate the endive leaves and wash them.

Begin assembling the salad in a serving dish. First, add the endive and sweetcorn. Peel the avocados and cut them into small pieces. Next, grate the pumpkin and add it to the salad along with the avocados, walnuts and currants.

Drizzle with lemon juice and olive oil and mix. Finally, add the toasted nori and a little more olive oil.
Now you have one of those salads that is a must for Christmas dinner.
