Its author, the cook Eva Crespo Vázquez, was born on Illa de Arousa, a special enclave surrounded by high-quality seaweeds on the coast of Galicia. She has spent three decades promoting vegetarian cuisine, the result of her personal and family choice for this diet. She has taught courses and cooked at many events over the years. We can say that she is a “veteran” of vegetarian cooking in Galicia and one of the first to become familiar with the country’s seaweeds.
